    ml
    green, yellow and red peppers, chopped
  • 1
    medium-sized onion, finely chopped
  • oil
  • 15
    ml
    curry powder
  • 30
    ml
    fresh coriander leaves, finely chopped
  • 30
    ml
    fresh parsley, finely chopped
  • 250
    g
    cooked steamed vegetables, sliced
  • 1
    Litres
    cooked rice
  • salt and freshly ground black pepper to taste
  • 2
    ml
    butter
 

Method

 
Stir-fry the peppers and onion in a little heated oil until just tender. Stir in the curry powder. Add the remaining ingredients, mix well and dot with butter. Spoon the rice mixture into a colander and heat over boiling water until warmed through. Alternatively, heat in the microwave oven.
