Savoury pumpkin purée

    onions, finely chopped
  • 2
    cloves garlic, crushed
  • oil
  • 1
    kg
    peeled pumpkin, diced
  • 10
    ml
    fresh chopped sage
  • 10
    ml
    tomato purée
  • 15
    ml
    brown sugar
  • 125
    ml
    chicken stock
  • salt and freshly ground black pepper
  • 25
    ml
    butter
  • 250
    ml
    grated cheese
 

Method

 
Fry the onions and garlic in a little oil until tender and add the pumpkin, sage, tomato purée, brown sugar and stock. Reduce the heat, cover and simmer until tender. Drain off as much of the liquid as possible and mash the pumpkin lightly. Season with salt, pepper and butter and stir in the grated cheese. Serve hot as a delicious side dish. Serves 4-6.
