Savoury phutu

    oil
  • 1
    onion, chopped
  • 1
    clove garlic, crushed
  • 2
    tomatoes, peeled and chopped

    green or red pepper, chopped

    baby corn
  • 5
    ml
    turmeric
  • salt and pepper
  • 500
    ml
    cooked phutu
  • 3
    hard-boiled eggs, quartered
  • 250
    ml
    cheddar cheese, grated
  • 15
    ml
    chopped parsley
 

Method

Heat oil and sauté onion and garlic until transparent. Add tomatoes, peppers, baby corn, turmeric, salt and pepper, and cook for 3 minutes. Spoon cooked phutu over sauce and toss lightly to mix. Cook over a medium heat for 15 minutes. Lightly mix in eggs, cheese and parsley. Serve warm with barbecued meat.
