400.00 g mince — curried
4.00 eggs — extra-large
sea salt and freshly ground black pepper
80.00 ml cheddar cheese — grated
fresh parsley — finely chopped

Method:

Preheat the oven to 200 ºC. Spray four small ramekins with non-stick spray or grease well.
Divide the curried mince or leftover meat between the four ramekins (do not overfill). Break an egg on top and season with salt and black pepper if de sired. Sprinkle with grated cheese. Sprinkle a little parsley on top and bake for 10-15 minutes or until the eggs have set and are done.
Serves 4 as a light meal.
