Heat the oil in a large frying pan. Add the onions and fry over a gentle heat for 10 minutes.
Increase the heat and add the mince. Stir until the meat has browned.
Add the tomatoes, tomato paste, green pepper, origanum and lemon rind and simmer for five minutes. Season to taste with salt and freshly ground black pepper.
Spread the mixture out evenly in the pan and make four to six dents in the mince. Break an egg into each hole.
Cover and cook over a low heat for five to six minutes until the eggs are cooked.
Serve hot with pita bread.
