    coarse yellow mealie meal (polenta)

    cake flour
  • 10

    baking powder
  • 2

    bicarbonate of soda
  • 3

    salt
  • 1

    cayenne pepper
  • 2
    egg whites
  • 250
    ml
    buttermilk
  • 30
    ml
    oil
  • 30
    ml
    honey
  • 250
    ml
    fresh mealie kernels
  • 85
    ml
    grated low fat uncoloured cheese
  • 1
    chilli, seeded and finely chopped
  • 30
    ml
    finely chopped green pepper
 

Method

60 minutes
 
Prepare the steamer as indicated in the instruction booklet and fill with cold water. Spray an 11 x 22 x 7 cm loaf in with non-stick spray. Combine the dry ingredients and make a hollow in the centre. Beat together the egg whites, buttermilk, oil and honey. Add the mealie kernels, cheese, chilli and green pepper and mix well. Add the liquid to the dry ingredients, stirring until just blended. Turn into the prepared loaf tin and cover lightly with aluminium foil. Place the tin in the steamer, cover and steam for 60 minutes until done. Cool in the tin before turning out. Makes 1 medium loaf.
