Savoury mashed potatoes

    kg
    potatoes, peeled and cut into chunks
  • 100
    ml
    sour cream
  • 90
    ml
    milk
  • 1
    bunch spring onions, trimmed and sliced
  • 25
    g
    butter
 

Method

30 min
 
Cook potatoes until tender. Mash with sour cream until smooth. Return to pan and stir in milk. Reheat, then season to taste. Fry spring onions in butter for 2 minutes, then stir three quarters into mash. Spoon mash into a serving bowl and pour remaining spring onion and butter mixture over the top. Serves 6.
