Savoury crab Filling

    onion, chopped
  • oil
  • 30
    ml
    tarragon
  • 30
    ml
    toasted almonds, chopped
  • 240
    g
    poached crab meat (or shredded tuna)
  • 30
    ml
    watercress or parsley, chopped
  • 500
    ml
    cream
  • black pepper
 

Method

 
Sauté the onion in a little heated oil until tender. Add the tarragon and almonds. Stir in the crab meat. Add the herbs and cream, bring to the boil and simmer gently until the mixture is fragrant. Season with black pepper if desired. Use the mixture as a filling for pancakes. Enough for 10-12 pancakes.
