Savoury couscous with halibut

    salt

    butter
  • 500

    couscous
  • 5
    bunches spring onions, chopped
  • 1
    ripe tomato, cubed
  • 15
    ml
    parsley, chopped
  • FISH
  • 4
    halibut fillets
  • 45
    ml
    olive oil
  • black pepper, basil and parsley to garnish
 

Method

 
Boil water in a large saucepan. Add the salt and butter. Remove from the heat and add the couscous, stirring. Allow to swell for 2 minutes. Add spring onions, tomato and parsley. Rub the halibut fillets with olive oil and seasoning. Grill for about 4 minutes on each side, depending on the thickness. Garnish with basil and serve.
