Ingredients (10)

couscous
2.00 ml salt
30.00 ml butter
500.00 ml couscous
5.00 spring onions — bunch, chopped
1.00 tomatoes — ripe, cubed
15.00 ml fresh parsley — chopped
FISH
4.00 halibut — fillets
45.00 ml fresh chillies — 573
freshly ground black pepper — basil and parsley, to garnish

Method:

Boil water in a large saucepan. Add the salt and butter.
Remove from the heat and add the couscous, stirring. Allow to swell for 2 minutes.
Add spring onions, tomato and parsley.
Rub the halibut fillets with olive oil and seasoning. Grill for about 4 minutes on each side, depending on the thickness.
Garnish with basil and serve.
