Ingredients (7)

2.00 spinach — shredded, steamed
50.00 ml fresh chillies — 573
1.00 bay leaves
4.00 garlic — whole cloves
salt and freshly ground black pepper
5.00 ml vinegar — grape
nutmeg — ground, pinch

Method:

Drain the spinach.
Heat the olive oil along with the bay leaf. Add the garlic and stir-fry until golden brown. Remove the bay leaf and garlic.
Add the spinach to the hot oil and stir-fry for 1 to 2 minutes. Season with salt and pepper.
Add the vinegar and nutmeg and serve hot with Leg of lamb with flavoursome sauce (see recipe).
