Sautéed prawns on a basil mayonnaise

Ingredients (12)

12.00 prawns
mayonnaise
1.00 eggs
250.00 ml olive oil — extra virgin
1.00 fresh basil — bunch
50.00 ml wine — dry white
salt
lemon juice — to taste
garnish — garnish
12.00 cocktail tomatoes
4.00 fresh basil
4.00 nasturtium — flowers

Method:

1. Peel and clean prawns and fry them in olive oil for approximately 1 minute.
MAYONNAISE
2. Mix egg yolk with oil and a pinch of salt. Blend the basil and white wine until very fine. Mix basil paste with the egg and oil mixture, add lemon juice and salt. Spoon the mayonnaise onto the plates, place the prawns on the mayonnaise.
GARNISH
3. Finish with basil tips, nasturtium flowers and cocktail tomatoes.
Serves 4.
