Sausages and prunes poached in orange juice

Ingredients

  • 8
    pork sausages
  • 375
    ml
    orange juice
  • 12
    prunes, soaked overnight and lightly cooked
  • 5
    ml
    cinnamon
  • 15
    ml
    brown sugar
  • 2
    oranges, cut into segments
 

Method

Prick sausages and place in a frying pan. Add orange juice and prunes and bring to the boil. Reduce to a simmer and cook for 10 minutes. Transfer sausages to a baking tray. Slash with a knife and sprinkle with cinnamon and sugar. Brown under a preheated grill and serve with prunes and orange segments. Serve with baps or other fresh rolls. Serves 4.
