Sausage with lentils

Ingredients

    boerewors
  • 1
    onion, finely chopped
  • 1
    clove garlic, crushed
  • 1
    stalk celery, chopped
  • oil
  • 300
    g
    green or red lentils
  • 410
    g
    tomatoes, finely chopped
  • 150
    ml
    white wine or chicken stock
  • 150
    ml
    chicken stock
  • 7
    ml
    dried origanum
  • 15
    ml
    finely chopped parsley
  • 2
    ml
    nutmeg
  • 2
    ml
    sugar
  • salt and pepper to taste
 

Method

+/- 30 min
 
Place the sausage in a cold pan and heat till the sausage is cooked and brown on the outside. Turn the sausage with a pair of meat tongs. Remove from the pan and set aside, keeping it warm. Saute the onion, garlic and celery in a little oil till just tender. Add the lentils, tomatoes, white wine and chicken stock. Reduce the heat and simmer till the lentils are soft but not falling apart. Add the seasonings and mix. Serve with the sausage. Serves 4.
