Sausage with herb crust

    thin mutton sausage
  • 1
    large onion, finely chopped
  • 2
    large, ripe tomatoes, skinned and diced
  • salt and black pepper to taste

    origanum

    self-raising flour

    ml
    salt
  • 5
    ml
    mixed herbs
  • 100

    Cheddar cheese, grated
  • 1
    extra-large egg
  • 150
    ml
    milk
  • 15
    ml
    oil
 

Method

about 20 minutes
 
Preheat the oven to 180 ºC (350 ºF). Spray an ovenproof dish, 20 cm in diameter, with non-stick spray. Fry the sausage in a pan until brown on both sides. Place the sausage in the prepared dish and roll it into a spiral. Sauté the onion in the pan fat until soft and add the diced tomatoes. Add the seasonings and simmer until a nice sauce has formed. Pour the sauce over the sausage. Mix all the topping ingredients. Spoon over the sausage and bake for about 20 minutes or until baked through and lightly browned on top. Serve with a green salad.
