Ingredients (10)

8.00 sausages — pork
5.00 potatoes — medium, peeled and thinly sliced
1.00 onion — large, thinly sliced
courgettes — or baby carrots, sliced lengthways
70.00 g tomato paste
1.00 stock cube — beef
Worcestershire sauce — dash
15.00 ml fresh parsley — finely chopped
celery salt
salt and freshly ground black pepper

Method:

Place the sausages, each cut into 4 pieces, in the bottom of a casserole dish.
Arrange potatoes, onions and courgettes in alternate layers on top of the sausages.
Mix tomato paste and beef stock cube in 250 ml water, add the Worcestershire sauce, parsley and seasoning and pour over the casserole.
Cook in a medium oven at 180 ºC for 1 hour, or until potatoes are tender.
