Sausage and vegetable stir-fry

    frankfurters, cut into 2 cm slices

    large clove garlic, crushed

    finely grated fresh ginger

    frozen stir-fry vegetables
  • 440

    can pineapple chunks, drained
  • SWEET 'N SOUR SAUCE

    cornflour
  • 300
    ml
    water
  • 75
    ml
    soft brown sugar
  • 60
    ml
    vinegar
  • 30
    ml
    soy sauce
  • salt and freshly ground black pepper

    instant noodles
 

Method

 
Heat a heavy-based frying pan and lightly brown the frankfurters in a little oil. Remove from the pan and set aside. Sauté the garlic and ginger over medium heat to release the flavours and add the stir-fry vegetables. Stir-fry until cooked but still crisp. Add the pineapple chunks and sausages. Blend the cornflour with a little water to form a thin paste and mix with the remaining sauce ingredients. Add to the sausage and vegetable mixture, season and simmer for about 5 minutes until cooked. Season with salt and pepper. Meanwhile, prepare the noodles according to the package instructions. Serve the stir-fry with the noodles and a fresh green salad if desired. Serves 6.
