Sausage and cabbage soup

Ingredients

    oil
  • 2
    large onions, sliced
  • 2
    red chillies, chopped
  • 2
    Litres
    beef stock
  • 400
    g
    cabbage, thickly sliced
  • 3
    carrots, peeled and sliced
  • 2
    medium potatoes, peeled and cubed
  • 2
    sprigs fresh thyme
  • 200
    g
    peas
  • 500
    smoked sausage, sliced
  • salt and freshly ground black pepper, to taste
 

Method

30 min
 
Heat the oil in a large saucepan. Sauté the onions and chillies until soft.
Add the stock and bring to the boil.
Add the cabbage, carrots, potatoes and thyme and allow to simmer for 20 minutes.
Add the peas and sausage and allow to simmer for a further 10 minutes.
Season to taste and serve.
