Ingredients (10)

1.00 aubergine
65.00 ml oil
9.00 courgettes — small
250.00 ml rice — uncooked
565.00 ml water
3.00 ml cumin — ground
5.00 ml salt
freshly ground black pepper
500.00 g sausages — spicy
fresh parsley — for garnish

Method:

Slice the brinjal into thick slices and then into strips. Sprinkle with salt and leave in a colander to drain. Pat dry with paper towelling.
Heat the oil and stir-fry the brinjal and courgettes until tender. Add the rice and fry for another minute.
Add the water and spices, reduce the heat and simmer for 20-25 minutes until the rice is tender and done. Add more water if necessary.
Slice the sausages and fry in a little oil until done. Drain on paper towelling. Stir into the cooked rice mixture and heat for another 2-3 minutes.
Garnish with fresh parsley and serve hot.
Serves 5-6.
