Sausage and brinjal pilaf

    small aubergine

    oil
  • 9
    small courgettes, sliced
  • 250
    ml
    uncooked rice
  • 565

    water
  • 3
    ml
    ground cumin (jeera)
  • 5
    ml
    salt
  • freshly ground block pepper
  • 500
    g
    spicy sausages such as chorizo
  • parsley for garnishing
 

Method

+/- 30 min
 
Slice the brinjal into thick slices and then into strips. Sprinkle with salt and leave in a colander to drain. Pat dry with paper towelling. Heat the oil and stir-fry the brinjal and courgettes until tender. Add the rice and fry for another minute. Add the water and spices, reduce the heat and simmer for 20-25 minutes until the rice is tender and done. Add more water if necessary. Slice the sausages and fry in a little oil until done. Drain on paper towelling. Stir into the cooked rice mixture and heat for another 2-3 minutes. Garnish with fresh parsley and serve hot. Serves 5-6.
