Ingredients (12)

6.00 sausages — pork
oil — for frying
1.00 onion — large, sliced
1.00 green pepper — diced
1.00 garlic — cloves, crushed
10.00 ml cumin — ground
2.00 ml cayenne pepper
400.00 g tomatoes — whole, finely chopped
420.00 g beans in tomato sauce
400.00 g red kidney beans — tinned, drained
30.00 ml tomato purée
sea salt and freshly ground black pepper

Method:

Fry the pork sausages in a little oil until brown. Remove from the pan and cut into slices. Stir-fry the onion until tender and translucent. Add the green pepper and garlic and stir-fry. Add the cumin and cayenne pepper and stir-fry lightly.
Add the tomatoes, beans in tomato sauce, kidney beans, tomato purée and pork sausages. Season with salt and black pepper to taste. Reduce the heat and simmer for about 15 minutes or until heated through.
Serve hot with rice and a salad.
Serves 6.
