    bay leaves
  • 1
    onion, peeled and halved
  • 4
    cloves
  • 410
    g
    sauerkraut
  • 60
    g
    butter
  • 125
    ml
    chicken stock
 

Method

15-20 minutes
 
1. Attach bay leaves to onion using the cloves. 2. Drain the sauerkraut and place in a saucepan with onion, butter and stock. Cook slowly for 15 to 20 minutes, stirring occasionally. 3. Serve with kassler or eisbein. VARIATIONS Add a red-skinned apple or pineapple to the drained sauerkraut and bake in a casserole dish in a moderate oven. OR Cook the sauerkraut with grated boiled potato, bacon and fried onion.
