Ingredients (11)

125.00 g butter
125.00 g castor sugar
2.00 eggs — large
1.00 lemon — zest only
1.00 ml salt
25.00 ml milk
SAUCE
30.00 ml cornflour
125.00 g castor sugar
1.00 lemon juice
water — boiled
icing sugar — for dusting

Method:

1. Cream the butter and sugar until light.
2. Add the eggs, one at a time, beating well after each addition. Add the lemon rind.
3. Gently fold in the flour, salt and milk. Spoon the mixture into a greased 1,5 litre baking dish.
4. Mix the cornflour, sugar and lemon juice in a measuring jug. Pour in boiling water up to the 350 ml mark, stirring continually.
5. Pour the sauce over the pudding mixture and bake in a preheated 190 ºC oven for 40 minutes. Dust with icing sugar and serve.
