Saucy lemon dessert

    castor sugar

    large eggs
  • 1
    lemon, finely grated rind
  • 1
    ml
    salt
  • 25
    ml
    milk
  • SAUCE
  • 30
    ml
    cornflour
  • 125
    g
    castor sugar
  • 1
    lemon, juice
  • boiling water
  • icing sugar for dusting
 

Method

40 minutes
 
1. Cream the butter and sugar until light. 2. Add the eggs, one at a time, beating well after each addition. Add the lemon rind. 3. Gently fold in the flour, salt and milk. Spoon the mixture into a greased 1,5 litre baking dish. 4. Mix the cornflour, sugar and lemon juice in a measuring jug. Pour in boiling water up to the 350 ml mark, stirring continually. 5. Pour the sauce over the pudding mixture and bake in a preheated 190 ºC oven for 40 minutes. Dust with icing sugar and serve.
