Saturday lunch - quick 'n easy vegetables

    baby potatoes, thinly sliced
  • 10
    fresh button mushrooms, halved
  • 2
    courgettes, sliced into rings
  • 250
    ml
    cream
  • 1
    packet brown onion soup powder
 

Method

 
Preheat the oven to 180 ºC (350 ºF).
Grease an ovenproof dish. Arrange all the vegetables in the prepared dish. Blend the cream and onion soup powder and pour over the vegetables.
Cover and bake for 30-40 minutes or until the vegetables are soft and done.
Serves 4.
