Satin chicken

    large whole chicken
  • salt and freshly ground black pepper
  • 2
    ml
    thyme
  • 1
    whole orange, unpeeled and softened
  • 4
    whole cloves
  • SAUCE
  • 15
    ml
    lemon juice
  • 10
    ml
    honey
  • 10
    ml
    tomato sauce
  • 5
    ml
    Worcestershire sauce
  • 5
    ml
    prepared mustard
 

Method

 
Preheat the oven to 180 ºC (350 ºF). Spray an ovenproof dish with non-stick spray. Wash the chicken and pat dry with paper towelling. Season inside and out with salt, pepper and thyme. Quarter the orange if it is too big to fit inside the chicken. Stick cloves in the orange peel and place inside the chicken. Blend all the ingredients for the sauce and pour over the chicken. Cover and bake for about one hour or until the chicken is done. Remove the covering, switch on the oven grill and grill the bird until golden brown. Serve with a salad and vegetables.
