Sardine and salsa toasts

    large tomatoes, chopped

    red onion, finely chopped

    cloves garlic, finely chopped

    white wine vinegar

    small sardines, (fresh or frozen and thawed) cleaned, with head and tails removed
  • fresh sprigs of thyme to garnish

    lemon sliced
  • salt and freshly ground black pepper to taste

    slices ciabatta loaf (Italian bread)

Mix the tomatoes, onion, garlic, coriander, vinegar and sugar together in a small bowl. Cut each sardine lengthways and fill with sprigs of thyme and lemon slices, then sprinkle with salt and pepper. Grill for 5 minutes on each side until crispy. Brush the ciabatta bread slices with olive oil and then grill until golden brown. Spoon on the salsa and top with sardines. Serve with any remaining salsa.
