Ingredients (12)

4.00 tomatoes — large, chopped
1.00 red onion — finely chopped
2.00 garlic — cloves, finely chopped
30.00 g fresh coriander — chopped
15.00 ml vinegar — white wine
15.00 ml sugar
8.00 sardines
fresh thyme — to garnish
1.00 lemon — sliced
salt and freshly ground black pepper — to taste
8.00 slices ciabatta — loaf, Italian bread
15.00 ml fresh chillies — 573

Method:

Mix the tomatoes, onion, garlic, coriander, vinegar and sugar together in a small bowl.
Cut each sardine lengthways and fill with sprigs of thyme and lemon slices, then sprinkle with salt and pepper.
Grill for 5 minutes on each side until crispy.
Brush the ciabatta bread slices with olive oil and then grill until golden brown.
Spoon on the salsa and top with sardines.
Serve with any remaining salsa.
