Sardelles lemonates (Lemony sardines and potatoes)

Ingredients

    kg
    sardines, filleted
  • 5
    large potatoes, peeled and sliced
  • 3
    cloves
    garlic, crushed and chopped
  • 1
    hot chilli, finely sliced
  • 1
    lemon, grated zest only
  • 1.5
    l
    cold water
  • 125
    ml
    extra virgin olive oil
  • 30
    g
    butter
  • 2
    lemons juice only
  • 1/2
    tsp
    sugar
  • 2
    Tbs
    fresh italian parsley, finely chopped
  • Salt to taste
  • Oil to fry in
 

Method

40 mins
 
Fry the potatoes and the chilli lightly until the potatoes are golden brown before adding the lemon zest and the garlic and pouring in the cold water to simmer for about half an hour.

Skim whatever foam appears on top, add the sardine fillets and simmer for another  7 - 10 minutes until the sardines are just cooked.

Now add the butter, the lemon juice, the sugar, the parsley and salt to taste.

Serve with crunchy bread.
