Ingredients (17)

CRUST
500.00 g samp
1.00 eggs — beaten
100.00 ml cheddar cheese — grated
2.00 ml cayenne pepper
FILLING
20.00 ml oil
2.00 onions — large, chopped
1.00 garlic — cloves, crushed
1.00 green pepper — thinly sliced
salt
freshly ground black pepper
5.00 ml fresh basil
400.00 g tinned tomatoes — whole, drained and chopped
50.00 ml fresh parsley — finely chopped
410.00 g peas
3.00 eggs
125.00 ml milk
100.00 g cheddar cheese — grated

Method:

Preheat the oven to 180 ºC (350 ºF). Grease a 24 cm pie dish with margarine. Process the samp briefly in a food processor and add the egg, Cheddar cheese and cayenne pepper. Blend well and press into the prepared pie dish. Chill while preparing the filling. Heat the oil in a pan and sauté the onion, garlic and green pepper until translucent. Season to taste with salt, pepper and basil. Add the tomatoes and simmer for a few minutes. Add the parsley and peas and heat through. Pour into the prepared crust. Whisk the eggs and milk together and add the cheese. Pour over the vegetable mixture and bake for about 45 minutes until the filling has set.
Makes about 12 slices.
