Ingredients (16)

500.00 ml samp — uncooked, soaked overnight
turmeric
salt
2.00 onions — large, chopped
oil — for frying
25.00 ml curry powder — hot
5.00 ml turmeric
1.00 kg beef mince
50.00 ml chutney
30.00 ml sugar
10.00 ml salt
60.00 ml vinegar — brown grape
salt and freshly ground black pepper
250.00 ml milk
2.00 eggs
2.00 bay leaves

Method:

Preheat the oven to 180 ºC (350 ºF). Spray a large ovenproof dish with non-stick spray.
Drain the samp and cover with fresh cold water. Add about 5 ml turmeric to the water and boil the samp until soft and cooked.
Season to taste with salt towards the end of the cooking time. Drain and set aside.
Sauté the onion in a little heated oil until soft. Add the curry powder and turmeric and stir-fry for about 1 minute.
Add small quantities of the mince at a time and fry until done. Add the remaining seasonings and season to taste with salt and pepper.
Simmer for another few minutes. Add the samp and mix. Turn into the prepared dish.
Beat the milk and eggs together and pour over the mince mixture.
Place the bay leaves on top and bake for 30 to 40 minutes or until the egg mixture has set and is pale brown.
