Samp and beans with nuts

    samp
  • 250
    g
    dry butter beans
  • 250
    g
    unsalted peanuts
  • water
  • 3
    chicken stock cubes
  • salt and pepper to taste
  • 125
    ml
    skim milk powder
  • 75
    g
    margarine
 

Method

 
1. Cover samp and beans with water and soak overnight. 2. Place samp, beans and nuts in large saucepan and cover completely with water. Add crumbled stock cubes. Bring to the boil and then simmer for three hours adding more water if samp gets dry. 3. Season with salt and pepper, add milk powder and margarine, toss together or mash with a wooden spoon.
