    samp and bean mix, rinsed and soaked overnight
  • salt
  • ONION MIXTURE
  • 2
    onions, sliced
  • 2
    cloves garlic, crushed (optional)
  • 2
    ml
    whole cloves
  • 5
    ml
    allspice
  • oil
  • 2
    ml
    nutmeg
  • black pepper
  • 15
    ml
    curry powder
  • 5
    ml
    ground cumin (jeera)
  • 5
    ml
    ground coriander
 

Method

 
Prepare the samp mixture as described in the basic recipe. Add the curry seasonings when preparing the onion mixture and stir-fry for about 1 minute. Add the onion mixture to the samp mix and simmer until the samp is soft. Serve hot with meat and dried fruit, if desired. Serves 10-12.
