Sambuca Brownies

    bitter chocolate, chopped

    unsalted butter, diced

    sugar

    sambuca or aniseed liqueur
  • 195

    cake flour
  • 2
    ml
    salt
  • 1
    ml
    baking powder
  • 125
    ml
    pine nuts, toasted
 

Method

Preheat the oven to 180°C. Grease a 20 cm square cake tin, dust with cake flour and shake to remove any excess flour. Melt the chocolate and butter in a bowl over hot water or in the microwave oven. Stir frequently. Cool the mixture to room temperature. Beat together the eggs and sugar until pale and thick. Beat in the chocolate mixture and liqueur. Sift together the flour, salt and baking powder and stir into the chocolate mixture until just blended. Spoon the mixture into the tin, spreading it evenly. Sprinkle with the toasted pine nuts and bake for 30-35 minutes or until done. Cool completely in the tin before cutting into squares.
