Salsa verde

Ingredients

  • 2
    cloves
    garlic
  • 1
    Tbs
    capers
  • 6
    anchovy fillets
  • 4
    gherkins
  • 30
    g
    coriander
  • 30
    g
    basil
  • 3
    Tbs
    balsamic vinegar
  • 1
    Tbs
    wholegrain
  • Mustard
  • 125
    ml
    olive oil
  • Freshly ground black pepper
  • Salt if necessary
 

Method

Finely chop the garlic, capers, anchovy fillets, gherkins, coriander and basil.

Place the ingredients into a bowl and add the vinegar and mustard.

Slowly pour in the olive oil into the mixture stirring continuously.

Season with the pepper and add salt only if necessary.
