Salmon with lime and garlic butter and sesame noodles

    thin noodles

    pieces fresh or lightly smoked salmon trout, or any firm line fish

    cloves garlic, crushed
  • 2
    limes, juice and zest (or use 1 lemon)

Boil the noodles for 10 minutes or until tender and drain well.
Heat oil in a wok or large frying pan over a high heat.
Add sesame seeds and stir-fry for one minute, then add noodles and stir-fry over a high heat for three to five minutes.
Stir in coriander, remove from the heat and keep warm.
Heat half the butter in a heavy-based frying pan, add the chilli jam and stir well.
Add the fish and fry over a medium heat for two to three minutes until browned, then turn and cook for a further two to four minutes, depending on the thickness of the fish.
Remove the fish from the pan and add the remaining butter, garlic and lime or lemon juice and zest.
Cook for one minute.
To serve, dish up the noodles onto plates.
Top with fish and drizzle with lime and garlic butter.
Garnish with fresh coriander.
