Salmon with asparagus & herbs

    salmon
  • 75
    g
    butter
  • 125
    ml
    dry white wine
  • 180
    ml
    fish stock or water
  • 15
    ml
    lemon juice
  • 20
    asparagus spears
  • 250
    ml
    fresh cream
  • 30
    ml
    chopped fresh basil
 

Method

 
1. In a wide, heavy-based pan, poach salmon gently in melted butter. Cook for about 30 seconds on each side. Remove and keep warm. 2. Pour wine, fish stock and lemon juice into the pan. Bring to the boil. Add asparagus and simmer until cooked. Remove asparagus with a slotted spoon and keep warm. 3. Increase heat and reduce liquid by half. Add cream, stirring all the time. Add chopped herbs to finish. 4. To serve, spoon sauce on to warm serving plate, place salmon in the middle and arrange asparagus spears around the edge of the plate.
