Ingredients (9)

250.00 g norwegian salmon fillets — fresh
8.00 spring onions — chopped
15.00 ml capers — finely chopped
30.00 ml gherkins — finely chopped
15.00 ml lemon juice
30.00 ml fresh Italian parsley — finely chopped
30.00 ml mayonnaise
5.00 ml salt and freshly ground black pepper — to taste
100.00 ml crème fraîche

Method:

1. Chop the salmon finely and
mix it with the onions, capers,
gherkins, lemon juice, parsley
and mayonnaise. Season to
taste. Press the mixture into
moulds, such as ramekins
or teacups. Refrigerate until
you want to serve them, or
turn them out on serving
plates immediately.

2. Garnish with créme fraîche
and caviar and serve.
