Salmon sandwich filling

    x 415 g cans pink salmon
  • 1
    bunch spring onions, finely chopped
  • 15

    fresh basil
  • 30
    ml
    lemon juice
  • 1
    leon, the finely grated peel
  • 45
    ml
    fat-free yoghurt
  • 15
    ml
    lite mayonnaise
  • salt and milled pepper
  • 60
    g
    watercress
 

Method

 
Gently mix all ingredients, except watercress, together. Season to taste.
Pack in a ready-to-go container.
To serve, spread salmon mixture onto brown bread or crackers, and top with watercress.
