Salmon, green bean and spring onion quiche

    spring onions

    garlic, crushed

    fine green beans, trimmed and cut into 2cm lengths
  • 1

    pink salmon, flaked (213g)
  • 3
    large eggs
  • 125
    ml
    milk
  • 250
    ml
    fresh cream
  • 15
    ml
    lemon juice
  • grated Cheddar cheese, for sprinkling

Preheat the oven to 160°C.

Pastry:

Blend the cake flour, cheese and butter in a food processor just until it comes together to form a dough. Press into a 24cm quiche tin.

Filling:
Heat the butter in a heavy-based saucepan. Once the butter has melted, lightly saute´ the spring onions, garlic and green beans. Mix in the salmon, then spoon the mixture into the pastry base.

Beat the eggs, milk, cream and lemon juice, and season to taste. Pour over the filling in the pastry base and sprinkle with cheese, if you prefer.

Bake in a preheated oven for 45 minutes or until set.
