Salmon burgers

    medium potatoes, cooked and mashed

    canned salmon, drained well

    spring onions, finely sliced

    small red pepper, diced

    gherkins, chopped

    dried breadcrumbs

    large egg, beaten

    burger rolls, buttered
  • seafood mayonnaise, sliced tomato and lettuce, to serve

Mix together mashed potato, milk, lemon juice, salmon, spring onions, red pepper and gherkins. Season with salt and freshly ground black pepper, to taste. Shape into 6 large fish cakes. Dip each fish cake in egg, then coat with breadcrumbs. Place on a baking tray and refrigerate for 20-30 minutes. Brush lightly with oil and braai over medium coals for 5 minutes on each side, until crisp and browned. Serve in a burger roll with seafood mayonnaise, sliced tomato and lettuce. Serves 6.
