Salmon blinis

    g
    cake flour
  • 5
    ml
    baking powder
  • 20
    ml
    oil
  • 1
    egg
  • 120
    ml
    milk
  • 1
    small pot of creme fraiche
  • 1
    small pot of caviar
  • Black pepper
  • 200
    g
    packet of smoked salmon or salmon trout
 

Method

 
1. Sift dry ingredients into a mixing bowl. Mix the remaining ingredients together in a separate bowl and then gently stir into the dry ingredients, leaving the mixture slightly lumpy.
2. Lightly grease a pan, and heat over a medium heat. Drop small spoonfuls on to the pan and turn when bubbles show on the surface. Fry a few at a time until golden on both sides.
3. Tear some smoked salmon or salmon trout and fold it onto the blinis.
4. Top with a dollop of creme fraiche and a little caviar.
