Ingredients (12)

500.00 g baby potatoes — washed
30.00 ml fresh chillies — 573
200.00 g courgettes — sliced lengthways
4.00 salmon — fillets
1.00 lettuce — cos
1.00 onion — halved, sliced
2.00 tomatoes — halved and sliced
DRESSING
100.00 ml mayonnaise
15.00 ml lemon juice
45.00 ml fresh chillies — 573
0.00 sugar — pinch
20.00 ml fresh dill — chopped

Method:

Boil the potatoes until tender, drain and cool, then halve.
Brush a griddle pan with olive oil.
Fry the courgettes and the fish.
The fish will take about five minutes on each side ? when it starts to flake it is done.
The courgettes should be tender.
Remove both from the heat and allow to cool.
Dressing:
Mix ingredients and season to taste with salt and freshly ground black pepper.
Place other ingredients on a platter and drizzle with dressing just before serving.
