Salmon and courgette salad

Ingredients

  • 500
    g
    baby potatoes, washed
  • 30
    ml
    olive oil
  • 200
    g
    courgettes, sliced lengthways
  • 4
    salmon fillets
  • 1
    cos lettuce, broken into pieces
  • 1
    small onion, halved and finely sliced
  • 2
    tomatoes, halved and sliced
  • DRESSING
  • 100
    ml
    good-quality mayonnaise
  • 15
    ml
    lemon juice
  • 45
    ml
    olive oil
  • pinch of sugar
  • 20
    ml
    fresh dill, chopped
 

Method

20 minutes
 
Boil the potatoes until tender, drain and cool, then halve.
Brush a griddle pan with olive oil.
Fry the courgettes and the fish.
The fish will take about five minutes on each side ? when it starts to flake it is done.
The courgettes should be tender.
Remove both from the heat and allow to cool.
Dressing:
Mix ingredients and season to taste with salt and freshly ground black pepper.
Place other ingredients on a platter and drizzle with dressing just before serving.
