Ingredients (8)

lettuce — leaves
1.00 tomatoes — sliced
potato salad — leftover
1.00 eggs — hard-boiled, wedges
2.00 sardines — drained
1.00 onion — sliced into rings
salt and freshly ground black pepper — to taste
mayonnaise

Method:

Sprinkle the lettuce leaf pieces on a platter and arrange the tomato slices on them. Top with the potato salad. Surround with the hard-boiled egg wedges and place the sardines on top of the potato salad. Sprinkle with the onion rings or chopped spring onion. Season with salt and pepper to taste and serve with dollops of mayonnaise.
Serve immediately or chill till needed.
Serves 1.
