Salad of winter fruits

    dried peach halves, washed and soaked overnight in water to cover

    dried nectarine halves, washed and soaked overnight in water to cover

    guavas, peeled
  • 4
    oranges, segmented and membranes removed

    granadilla pulp
  • SYRUP
  • 500
    ml
    water
  • 250
    g
    sugar
  • 5
    ml
    vanilla essence
  • 2
    ml
    almond essence
  • 10
    ml
    orange peel strips
  • 1
    cinnamon stick
 

Method

 
SYRUP: Bring water, sugar, vanilla essence, almond essence, orange peel and cinnamon to boil. Drain dried fruit, slice and add to syrup. Simmer until softened, then remove from stove and chill thoroughly. Halve guavas, remove pips and slice into crescents. Arrange guavas and oranges segments on a platter, spoon sliced dried fruit and syrup over. Sprinkle with granadilla pulp and chill well. Decorate with mint or lemon verbena and serve with thick cream.
