Salad of warm calamari, lemon and rocket

    brown sugar

    lemon, peeled and sliced

    sunflower oil
  • 30

    lemon juice
  • 1
    fresh chilli
  • 2
    cloves garlic, crushed

    castor sugar

    calamari rings
  • 30

    fresh rocket

Heat brown sugar and 15 ml water together in a saucepan. Add lemon slices and allow to simmer on both sides for 5 minutes. Remove from the saucepan, cut each slice in half and set aside. To make the dressing, place 60 ml oil, lemon juice, chilli, garlic and castor sugar in a food processor and liquidise to blend well. Heat remaining oil in a heavy-based frying pan until smoking. Add calamari rings and stir-fry for 30 seconds. Remove from heat. Divide rocket between 4 plates. Top with calamari and lemon slices. Drizzle with dressing, season with salt to taste and serve immediately. Serves 4.
