    white balsamic vinegar

    fresh lemon juice
  • 45

    water
  • 1
    clove garlic, crushed

    Dijon mustard

    olive oil
  • Italian parsley, chopped
  • salt and milled pepper
  • SALAD
  • 2
    x 170 g cans tuna chunks in brine, drained
  • 300
    g
    green beans, trimmed
  • 4
    free-range eggs, hard-boiled and peeled
  • 8
    good quality anchovies, chopped
  • 16
    calamata olives
  • 16
    baby potatoes
  • 2
    large tomatoes, cut into wedges
  • 1
    red onion, sliced
  • 2
    Cos lettuce, torn roughly
 

Method

15 minutes
 
Whisk dressing ingredients together.
Cook beans in rapidly boiling water for about six minutes. Rinse under cold water, drain and set aside.
Arrange salad ingredients on a large platter or individual plates.
Drizzle with dressing and serve.
