DRESSING
30.00 ml vinegar — white balsamic
15.00 ml lemon juice — fresh
45.00 ml water
1.00 garlic — cloves, crushed
10.00 ml Dijon mustard
45.00 ml fresh chillies — 573
0.00 fresh Italian parsley — chopped
0.00 salt and freshly ground black pepper
SALAD
2.00 tuna — tinned chunks in brine, drained
300.00 g green beans — trimmed
4.00 eggs — hard-boiled
8.00 anchovy fillets
16.00 calamata olives
16.00 baby potatoes
2.00 tomatoes — large, wedges
1.00 red onion — sliced
2.00 lettuce — cos, torn

Method:

Whisk dressing ingredients together.
Cook beans in rapidly boiling water for about six minutes. Rinse under cold water, drain and set aside.
Arrange salad ingredients on a large platter or individual plates.
Drizzle with dressing and serve.
