Ingredients (9)

480.00 g flour — cake
5.00 ml Baking powder
2.00 eggs — beaten
200.00 ml caramel sugar — or brown sugar
250.00 g butter
12.00 cardamom — pounded
5.00 ml mixed spice — ground
125.00 ml oil
125.00 ml currants

Method:

Combine all ingredients, except currants, to form a dough. Roll out dough. Cut out with oblong cookie cutter and place on a greased baking tray. Press three currants in a row down the centre of each cookie.
Bake at 180 ºC on second shelf of oven for 5 minutes, then on middle shelf for 7 minutes until golden brown.
Makes about 40.
