    cake flour

    baking powder

    eggs, beaten
  • 200
    ml
    caramel or soft brown sugar
  • 250
    g
    butter
  • 12
    cardamom pods, pounded
  • 5
    ml
    mixed spice
  • 125
    ml
    oil
  • 125
    ml
    currants
 

Method

 
Combine all ingredients, except currants, to form a dough. Roll out dough. Cut out with oblong cookie cutter and place on a greased baking tray. Press three currants in a row down the centre of each cookie. Bake at 180 ºC on second shelf of oven for 5 minutes, then on middle shelf for 7 minutes until golden brown. Makes about 40.
