MARINADE
125.00 ml fresh chillies — 573
375.00 ml wine — dry white
1.00 garlic — cloves, finely chopped
2.00 lemon grass — stalks
2.50 ml fresh ginger — grated
VEGETABLES

0.00 courgettes — sliced
0.00 aubergine — cubed
0.00 button mushrooms
0.00 pepper — red, green, yellow, chunks
0.00 cherry tomatoes

Method:

Mix the marinade ingredients. Cook the pickling onions in boiling water for six minutes and add to the rest of the vegetables.
Pour over the marinade ingredients and marinate for a few hours.
Drain the vegetables and stir-fry for 10 to 15 minutes in a skottelbraai over medium heat, adding a little marinade if necessary.
