Rustic ratatouille

  • MARINADE
  • 125
    ml
    olive oil
  • 375
    ml
    dry white wine
  • 1
    garlic clove, finely chopped
  • 2
    stalks lemongrass
  • 2.50
    ml
    grated fresh ginger
  • VEGETABLES
  • pickling onions
  • baby marrows, cut into thick slices
  • brinjals, cubed
  • button mushrooms
  • red, green or yellow peppers, seeded and cut into chunks
  • cherry tomatoes
 

Method

 
Mix the marinade ingredients. Cook the pickling onions in boiling water for six minutes and add to the rest of the vegetables.
Pour over the marinade ingredients and marinate for a few hours.
Drain the vegetables and stir-fry for 10 to 15 minutes in a skottelbraai over medium heat, adding a little marinade if necessary.
