Rusks with artichokes and feta

Ingredients (10)

30 ml olive oil — extra virgin
15 ml vinegar
sea salt and freshly ground black pepper
1 lettuce
12 bread — French, sliced and toasted
125 g feta cheese — crumbled
6 artichokes — marinated, halved
30 ml capers
olive oil
peppercorns — black

Method:

Whizz together oil, vinegar, salt and pepper.
Toss with salad leaves.
Lay out French bread ‘rusks’ on a serving platter and top with a few salad leaves, then pile feta, artichokes and capers on top.
Drizzle with a little olive oil and grind some black pepper over.
