  • 750
    ml
    cake flour
  • 125
    ml
    self-raising flour
  • 5
    ml
    salt
  • 60
    ml
    sunflower oil
  • 250
    ml
    cold water
  • 250
    g
    softened butter
  • oil for frying
 

Method

 
1. Mix cake flour, self-raising flour and salt in a bowl. Add oil and rub in with fingertips until mixture resembles fine breadcrumbs. 2. Add enough water to mix to a fairly soft dough. Roll out on a floured surface to the size of a 23 x 32 cm Swiss roll tin. 3. Spread dough with softened butter and roll up like a Swiss roll. Cover with a tea towel and allow to stand for 30 minutes. 4. Break off pieces of dough and form into balls the size of a tennis ball. 5. Roll out each ball into a disc the size of a dinner plate. Heat a tavi or frying pan and fry in a little hot oil for 2 minutes on each side, or until the rotis appear golden and freckled. 6. Serve immediately with curry.
