Roquefort chicken

    chicken breast fillets
  • 120
    g
    cake flour, seasoned with salt and pepper
  • oil for frying
  • 125

    Roquefort cheese, finely grated or crumbled
  • 250
    ml
    cream
  • 15
    ml
    brandy (optional)
  • 5
    ml
    dried basil
  • salt and freshly ground black pepper to taste
 

Method

 
Preheat the oven to 180 ºC (350 ºF). Roll the chicken breast fillets in the seasoned cake flour and brown in the oil. Arrange the fillets in a large oven dish. Blend the remaining ingredients and pour over the chicken, spreading the mixture evenly. Cover with aluminium foil and bake for about 30 minutes until the chicken is tender and cooked. Serve with rice and fresh vegetables. Serves 8-10.
