Rooibos tea refresher

  • 3
    rooibos teabags
  • 125
    ml
    water
  • 1
    Litres
    boiling water
  • 750
    ml
    sugar
  • 250
    ml
    lemon juice
  • rind of a lemon
  • 500
    ml
    orange juice
  • 700
    ml
    soda water, chilled
  • julienned lemon rind for garnishing
 

Method

 
Heat the teabags and 125 ml (1/2 c) water in a saucepan. Bring to the boil and simmer for 10 minutes. Strain through a fine sieve or piece of muslin. Heat the remaining ingredients except the soda water until the sugar has dissolved. Add 65 ml (1/4 c) of the rooibos tea concentrate and simmer for 5 minutes. Strain through a fine sieve once more. Chill until ice cold and add the soda water just before serving. Serve ice cold and garnish the glasses with julienned lemon rind. Makes about 2,5 litres.
