    coconut

    cake flour

    cocoa

    baking powder
  • pinch of salt

    chocolate, broken into pieces
 

Method

10-12 min per batch
 
Preheat the oven to 180 ºC and spray two baking trays with non-stick spray. Cream the butter and add small quantities of the sugar at a time while beating continuously. Add the coconut and mix. Sift the cake flour, cocoa, baking powder and salt on top and mix until a soft dough is formed. Roll teaspoonfuls of the dough into balls and arrange on the baking tray. Flatten slightly and bake for about 10-12 minutes until done. Melt the chocolate in a glass bowl over boiling water or in the microwave oven and use to sandwich the biscuits together. Leave until the chocolate has set. Store in airtight containers. Makes 86 single cookies or 43 double cookies.
